hi,
I have two curtains that are constantly offline/unavailable in the Apple Home app via Matter.

Hub Tuya: ebde6fc7b520e478afui5r (HUB Matter Nova Digital)
Curtain 1: eb84268460c1904806j5cl (Bat. Curtain Nova Digital)
Curtain 2: ebc514da13b5214a93du1d (Bat. Curtain Nova Digital)

I often have to press the pause button on the remote control to wake it up and re-sync its status in the Apple Home app. Please help!!

From the log, I can see that the network connection quality of the gateway is not very good and it often goes offline. You can check the network connection issue of the gateway itself.
